Festive Cranberry Chutney
1 bag cranberries
1 cup water
1 cup organic sugar
1/2 orange – juice and part of rind
3-5 cloves, crushed lightly
1/2 tsp ground cinnamon
1/2 tsp ground corriander
1/2 ground black pepper
2 stalks celery, fine chopped
1/2 onion, fine chopped
1/2 serrano pepper, sliced
1 Tbsp. olive oil
Cook cranberries, sugar, water and a few shavings of orange rind and juice from 1/2 orange. Boil for 10-15 mins uncovered.
Meanwhile, chop and then saute onion and celery in olive oil. Add cloves, cinnamon, corriander, black pepper, serrano pepper. Let flavors meld together for one minute then turn off heat and leave on stove.
Remove cranberries from heat. Stir in saute veggies and spices. Mixture may seem runny. It will congeal as it cools.
